Heat enough butter to cover the base of the pan. When the fat is hot, pour in the eggs; as it sets, raise the handle up and draw set mixture up, allowing the liquid egg to run down onto the hot pan. When all is set, tilt the pan forward and roll the omelette over. Serve immediately on a hot plate. It can be filled with almost anything, before being rolled over.

Pouring Custard: beat 2-3 eggs for every one pint of milk lightly. Heat the milk and pour gradually over the eggs; add sugar and flavouring to taste; cook in a double pan or jug and hot water until the required consistency has been achieved. If it is not to be served immediately, pour a thin layer of water onto it to prevent a skin forming.

Baked Custard: proceed as above and then pour the custard into greased dish; sprinkle with nutmeg; and place dish in water to halfway up its sides. Bake at 350 F for 35-45 mins; test by inserting a knife – it should be clean on removal.

Steamed Custard: as above, but cook in a steamer or pan of boiling water. The cooking time is about the same too.

Custard Tarts: pour pouring custard into unbaked pastry cases and bake in the oven for 40-50 minutes. A little jam can be placed at the base of the pastry case first, if desired.

OK, first things first, before you start anything make sure that if it is possible, that you only use the freshest ingredients possible. Fresh ingredients will make your final pizza taste so much better than using frozen pizza dough and canned sauce. But then again a pizza is a pizza and will taste good no matter what.

The first thing you need to do is to fire up your wood burning outdoor pizza oven, if you have one. If you do not have one, your kitchen oven will have to do. Just so you know you should bake a thin crust pizza between 500 and 550 degrees, but a thicker crusted pizza should be baked at a lower temperature.

When forming the crust, be sure that it is at room temperature, this will make the dough easier to shape. If you notice that no matter how much you stretch the dough it keeps pulling back into a smaller shape, stretch the dough as best as you can and let it set for 5 to 10 minutes. Then go back and it should stretch out to where you want it.

Adding the sauce is somewhat of an art. Firstly you can use as much or as little as you want but do not add too much sauce because it can cause the dough to not cook properly. When you are spreading the sauce around keep it about half an inch away from the edges. This will allow the edge of the dough to rise up higher than the rest of the pizza.

Now of course for the cheese. Mozzarella is the best choice for topping a pizza off, even though any kind of cheese can be used. I like to get fresh mozzarella and add just a little bit of sharp cheddar cheese. It adds a subtle hint of flavor, which is what I prefer, but again it is up to you.

Now it is time to pop that bad boy in to your outdoor pizza oven. At about 550 degrees you should cook your thin crusted pizza about 8 minutes, give or take depending on how thin the crust is. For those who like a thicker crust you may want to cook your pizza at 450 for about 15 minutes. These times are not set in stone, all ovens, whether it is your kitchen oven or your outdoor pizza oven will take different times to cook the pizza. Just be sure to keep an eye on your pies and make a note of how long to cook them in your oven.
